With its strong flavours and tempting aromas, the delicious food of the City of Mexico has an identity of its own. Its spicy, suggestive and weighty dishes are born from an unusual gastronomy crossbreeding that intertwines pre-Hispanic, Spanish and French roots.

But the most popular delightfulness of the Aztec gastronomy is the whims, sublime appetizers which due to the strength of their taste have reached beyond the country's borders. The favourite hors d'oeuvre are the tacos, corn omelettes stuffed with beans or cheese, accompanied by guacamole (avocado sauce); the chilaquiles, fried omelettes with milk cream and chilli sauce; and the quesadillas, half-moon shape patties stuffed with melted cheese.

The classical corridas, a menu of four traditional dishes accompanied by the waters, a squash of fruits flavoured down with water, are served at lunchtime at the fondas, local restaurants with economic prices.
