GASTRONOMY
It is a fusion of flavours with indigenous and Spanish seasoning the one taking place in the kitchens of San Cristobal de las Casas, where exquisite dishes, which turn the simple act of eating into a ritual full of traditional aromas that open our appetite, are prepared.
The cuisine of San Cristobal de las Casas has to be explored with calmness and delectation to enjoy its emblematic dishes, such as the asado chiapaneco (pork seasoned with chilli and spices), the stuffed chilli (pork and vegetables), the soup of bread (a secret recipe) and the tongue in saffron (seasoned with vegetables, sweet and white bread and spices).
Nonetheless, the indisputable star is the tamal, a dough of milled maize, pork, chilli of so called simojovel, plums, olives, mole, saffron, mumo (an aromatic leaf) and several secret condiments, all wrapped in banana and maize leafs; a true offering to the palate.
Do not ignore the chalupas, prepared with vegetables and loin of pork, when the time to try the Mexican whims comes; and the succulent composed breads and the golden tacos, made with an especial dough. To accompany these delicatessens and moisture the palate, drink a sweet beer, a hot punch, the bitter atole or the mistelita (elaborated with diverse fruits tanned in liquor).
